Matzah Marshmallow Krispies Treats 棉花糖無麩餅
Passover week features a lot of matzah recipes. If you celebrate Passover too, you know what I mean. If you are on social medias, you probably have seen a lot of creative matzah recipes too. I know I have. and I know I have made so many of them too.
In general I am a dessert person, and during Passover I always try to make some sweets that are new and fun, from variation of almond cakes to marshmallows to chocolate matzah. And this year, one of my proud creations is the combination of marshmallow and matzah- aka the passover friendly version “rice” krispies treats- for those of you who don’t eat rice during passover!
Matzah Marshmallow Krispies Treats 棉花糖無麩餅
Yield 16 krispies squares
Ingredients
Unsalted butter, 113g
Salt, 2g
Vanilla extract, 4g
Mini marshmallow, one 10oz bag, aout 285g
Matzah sheet, 4 sheets crumbled to small pieces and 1 sheet leave as whole
Instructions
Line a 8” square pan with parchment paper.
In a pot, melt the butter over medium low heat until the butter becomes golden brown. About 3-5 minutes. Stir to make sure the bottom is not burned and the butter is browned evenly.
Off heat, add in the salt and vanilla extract. Stir a little. Add in the marshmallow and return to medium low heat. Continue to stir until all marshmallows are melted.
Off heat, fold in all the matzah crumbles. Fold until all matzot are mixed in with the marshmallow mixture. Immediately pour the mixture into the prepared pan.
Let it sit and cool for at least 2 hours before unmold and slicing. Store in an airtight container.
