Sesame Tofu Tabbouleh 麻醬豆腐塔布雷沙拉
Tabbouleh is type of mediterranean salad that usually contains grains, herbs, cucumber, tomato and olive oil. I remember the first time I tasted it a few years ago, I was so amazed by how refreshing and delicious this bowl of humble ingredients were. When make in season , all those sweetness from tomato and other vegetable comes through beautifully. It has since become one of my favorite salad to make.
I love the traditional and classic tabbouleh, but I also want to make a fusion version that include some of my home flavors- I replaced the olive oil with some of my homemade peanut sesame sauce and it works heavenly well. The creamy dressing gives an extra comfort to the dish, it adds an extra flavor and aromatic touch to the salad, truly amazing!
Sesame Tofu Tabbouleh 麻醬豆腐塔布雷
Ingredients
Red bulgur 50g
Boiling water, 1 ½ cup
Extra firm tofu, 8oz
English cucumber, 1/2, diced
Tomato, 1, diced
Red onion, medium, ¼, diced
Cilantro, leaves and tender stems, 80g, minced
Dressing Ingredients
Sesame paste 20g
Peanut butter 20g
Cold water 25ml
Soy sauce ¾ tsp
Rice vinegar ¼ tsp
Sesame oil ½ tsp
Sugar 4g
Salt ⅛ tsp
Instructions
Soak the bulgur in boiling water for an hour. Drain and set aside to cool to room temperature.
Place the chopped onion in a bowl, add in lemon juice, and pickle both for about 30 minutes.
Combine the sesame paste, peanut butter, and cold water together, mix well to combine. Add in the rest of the dressing ingredients and continue to mix until smooth.
When ready to serve, place the bulgur, onion, cucumber, tomato, and herbs in a serving bowl, mix a little and then drizzle in the dressing, mix to combine and serve.
