Caramelized Apple Chips 焦糖蘋果脆片

Rosh Hashanah is around the corner. This year I am making tons of apple chips for the holiday as our snacks and for our dinner guests to enjoy with honey to celebrate the New Year.

These chips are a bit time consuming to make as they are slow baked in the oven at a relatively low temperate to dry out the apple without burning them too fast. However, they can easily be batch made several days ahead and serve the day of!

Ingredients

  • Apple, 1

  • Sugar, 50g

Instructions

  1. Preheat the oven to 225F. Line a baking sheet with parchment paper.

  2. Use a mandoline and slice the apple into 1/8” to 1/4” thickness slices. Remove the remained seeds after sliced. The thickness here matters ad if they are too thick, it takes longer to dry them out and harder to curl up.

  3. Dip the apple slices in the sugar to coat both sides. Arrange the apple on the baking sheet in single layer. Do not overlap. Bake for 1.5 hours and then flip the apple slices to the other side. Return to the oven for another 30 to 45 minutes until all slices are dried and edges are curly. Transfer the apple slices to a cooling rack to cool. Store the apple chips in airtight container in room temperature and cool space.
