Pineapple Black Sesame Rice Pudding 鳳梨黑芝麻米布丁
I always consider creamy food, like congee and oatmeal, a type of comfort food. Rice pudding falls right into that category so I’ve been loving this dessert ever since I first tasted it a few years back. Not until recently did I learn that rice pudding is actually so easy and fast to make! The condensed milk and cream reminds me of some tropical desserts I love growing up, which always has some kind of tropical fruits in them. With that in mind, I decided to create a tropical theme rice pudding recipe- and thats how this recipe is born. To add another touch from my childhood memory, I added some black sesame flavor to this as well. The pineapple and black sesame go so well with the creamy dessert. A nice and pretty summer dessert to try for sure!
Pineapple Black Sesame Rice Pudding 鳳梨黑芝麻米布丁
Yield 4-6 people
Ingredients
Rice 150g
Whole milk 570ml
Heavy cream 150ml
Black sesame powder 53g
Condensed milk 45ml
Butter 45g
Pineapple, cubed, 60g or more if preferred
Black sesame seeds, topping
Instructions
Add rice, milk, cream, and black sesame powder in a medium saucepan. Bring to a boil and lower the heat to maintain a soft simmer. Cook for 15-20 minutes until the rice is soft and tender. Add a little milk or water if the mixture becomes too thick before the rice is cooked.
Off heat, add in the butter, stir to melt and combine. Followed by the condensed milk. Continue to stir to mix well.
Divide the rice pudding into individual serving bowls. Top with cubed pineapple and some black sesame seeds and serve.
