Plum Pickled Bittermelon 梅漬苦瓜

Plum Pickled Bittermelon 梅漬苦瓜
Ingredients

  • White bittermelon, 1, halved, seeded, thinly sliced into ⅛” thickness

  • Pickled plum, 4-5, pitted and minced, keep the pits

  • Rice vinegar, 30g

  • Granulated sugar, 10g

  • Salt, 3g

Instructions

  1. Prepared a large bowl of iced water with ice cubes. Bring a pot of water to boil.

  2. Once the water starts boiling, add in the bittermelon slices, blanch for 20 to 30 seconds. Immediately transfer them to the ice bath. Set them aside to cool while preparing the sauce.

  3. Add the minced plum, rice vinegar, sugar and salt in a ziploc bag and mix to combine.

  4. Once the bittermelon is iced cold, drain the water and transfer them into the ziplock bag with the sauce. Make sure no remaining ice cubes go into the bag with the bittermelon slices. Coat all slices well with the sauce mixture. Seal the bag. Make the mixture into a thin single layer, and leave the bag laying flat in the fridge for at least 4 hours preferably overnight. 

  5. To serve, remove all the pits, transfer the amount you desired from the ziplock bag to a serving plate. Enjoy it cold.
